Right Bayou Cajun Cuisine was founded by New Orleans native Theron Mayeux, who moved to Portland, OR. Theron followed his dreams of opening his own food cart, honoring family tradition and following in his father’s culinary footsteps. The menu for Right Bayou Cajun Cuisine is about infusing traditional New Orleans Cuisine with the fresh, local ingredients that our Northwest region has to offer. And with a fine culinary arts degree and background, Theron’s food is the perfect mix of comfort food and classical training. Theron looks forward to sharing his love of the food from his childhood and his City, bringing a bit of New Orleans right here to the Northwest.
